Homemade Dinner Rolls

Hello all,
So I decided to write this post because of various requests to share this recipe of my homemade dinner rolls. Firstly, as a mom and home chef😍 , I think yeast is very essential in every kitchen. With yeast, you can do a lot of cooking and baking to feed a household. This recipe requires yeast and so you will be needing that in this recipe and in my other recipes to come. I will also share some recipes that don't require yeast so you can make nice snacks in the absence of yeast! The dinner rolls recipe is time consuming like any other yeast recipe, so you'll have to be patient. 

Ingredients
42 grams butter
120 grams milk
30 grams sugar
2 grams salt (if you're using salted butter, you can omit this)
1 large egg (weighs apprx. 50gms)
7grams dry yeast
210 grams all purpose flour
*1000 grams patience 😀😀😀  (a lot of it!!!)

Method
In a small pot, melt your butter. When melted, add your milk (please ensure that milk and egg are at room temperature so it doesn't cool the butter so much as we need the warm mixture to activate the yeast). Add sugar, salt and the egg. Mix together until the egg incorporates into the milk mixture. Then add the yeast. Cover the pot with a lid and leave the yeast to activate around 5 minutes. After 5 minutes, open the pot and you'll see the mixture a bit frothy. The yeast has been activated. Afterwards, add flour and mix everything with a spatula or wooden spoon. When it comes together, knead until it forms into a dough, it should feel sticky and not smooth. Cover the dough mixture with a plastic wrap and towel and allow it prove for 1 hour. I use a kitchen timer to guide me. You can also use the timer on your phone to do this, set for 60mins and wait. When your time is up, your dough would have doubled in volume. Deflate and knead the dough again into a ball. It should be smooth after you knead it this time. Cover again with the plastic wrap and towel and leave for another 40mins to rise. When your 40mins is up, knead the dough and divide into small balls like tennis balls. Grease a pan and put the balls in the pan. Space out the balls because they will eventually grow closer to each while rising and baking like the pictures below.

Cover again and leave the dough for 1hour(that's where the patience comes in👍). Some 45mins into the proving, preheat your oven to 180ºc. When it is time, crack and egg and baste the dough with it. Try to be gentle with it not to deflate the dough. Put in the oven and bake for 15-20mins depending on your oven. When rolls are ready, remove from oven and enjoy 😌👌 . When rolls are cooled, remove and store in a plastic bag or container so as to maintain freshness.

Trip to Sevilla, Spain

Hello all,
It's good to be back again. It has been a hectic roll of years but here I am again. I'm back with more exciting posts and experiences over time. Sometime in July 2016, I took a trip to Spain with my family. We drove all the way from Lisbon to Sevilha which was about 5 hours. Anyways, my previous experience with the kids travelling to Madrid in August 2015 was an eye opener as the kids got so restless on the way there. It took about the 6 hours driving. On our return home, I had a talk with my neighbour who also made the same trip to Madrid with his family and he gave me a little advice. On such trips he said, leave early in the morning before dawn and commence on the journey with the lil ones still asleep. By the time they wake up, you will be half way or almost there. It was a good idea which my husband and I tried but with little success. They woke up once we picked them up from bed and got all excited again. But the good news was that they slept off again in no time and we had a better trip than the one to Madrid.
Sevilla or Seville as some people call it is a lovely city with beautiful architectural monuments. Also a very hot city. The hottest city I have ever visited actually 😥👀 . It was a pleasant stay at Hotel Sevilla Barcelo de Renascimiento  which is very close, actually 5mins walk to the lovely water park Isla Magica

 While I hopped off the bus to get some slush, I met a fellow Nigerian, and it was a great pleasure knowing that one of our own was in charge of the zone as he worked with the city sightseeing bus company. Gave information to tourists who needed guidance. At a glance, I could tell he was Nigerian. I spoke Igbo to him and he immediately responded. Felt good 😀

It was fun trip although Spain has very odd eating hours. One of my most difficult experiences there. In the afternoon after lunch most places are closed till evening and the official dinner time is 8pm. Except if stop by a cafe or tavern for a drink and tapas. Not a good thing for a hungry tourist 😋 . I will put up more posts later on. Learn more about this beautiful city Ate já 💜

É bom estar de volta. Foi um rolo agitado de anos, mas aqui estou novamente. Estou de volta com posts mais emocionantes e experiências ao longo do tempo. Em algum momento em julho de 2016, eu fiz uma viagem para a Espanha com minha família. Dirigimos todo o caminho de Lisboa para Sevilha que foi cerca de 5 horas. De qualquer forma, a minha experiência anterior com as crianças que viajam para Madrid em Agosto de 2015 foi um abridor de olhos como as crianças ficou tão inquieto no caminho. Demorou cerca de 6 horas de condução. No nosso regresso casa, eu tinha uma conversa com o meu vizinho que também fez a mesma viagem para Madrid com a sua família e ele me deu um pequeno conselho. Em tais viagens, ele disse, sair cedo de manhã antes do amanhecer e começar a viagem com os lil ainda dormindo. Quando acordarem, estarão a meio ou quase lá. Foi uma boa idéia que meu marido e eu tentamos mas com pouco sucesso. Eles acordou uma vez que nós os pegamos da cama e ficamos todos excitados novamente. Mas a boa notícia foi que dormiram aqui novamente em nenhum momento e tivemos uma viagem melhor do que a de Madrid.
Sevilha ou Sevilha como algumas pessoas chamada é uma encantadora cidade com belos monumentos arquitetônicos. Também uma cidade muito quente. A cidade mais quente que eu já visitei realmente 😥👀. Foi uma estadia agradável no Hotel Sevilla Barcelo de Renascimiento, que é muito perto, na verdade, 5 minutos a pé do encantador parque aquático Isla Magica.

 Enquanto eu pulava fora do ônibus para obter alguma lama, eu conheci um camarada nigeriano, e foi um grande prazer sabendo que um dos nossos era encarregado da zona como ele trabalhou com a empresa de ônibus de turismo da cidade. Deu informações aos turistas que precisavam de orientação. De relance, eu poderia dizer que ele era nigeriano. Eu falei Igbo para ele e ele imediatamente respondeu. Me senti bem😉
Ele foi diversão viagem embora Espanha tem muito ângulo diferente comer horas. Uma das minhas experiências mais difíceis lá. À tarde, após o almoço, a maioria dos lugares está fechada até à noite e o horarío jantar oficial é às 20h. Exceto se parar por um café ou taberna para uma bebida e tapas. Não é uma coisa boa para um turista com fome 😋. Vou colocar mais postagens mais tarde. Ate já 💜

Vacation

Hello People,
I have been out for a while. Not really blogging as I used to as a result of my new job which I'm grateful for. A lot has happened in my life in the short period of absence. Weekends to enjoy with the family!








Homemade Milk Bread       



Preparation time: 15 minutes



Ingredients:

1 kg of flour

30 g of Baker's yeast

15 g salt


150 g butter


200 g sugar


400 ml milk


2 eggs

Preparation:



With a Mixing Spoon, mix the flour, sugar and salt in a Batedeira Mix. Make a hole in the center and put the warm milk with butter and yeast also. Beat the egg yolks with the whites in advance in the Quick Chef and add with the remaining ingredients in the Batedeira Mix.


Let the dough stand for about 20 minutes and then place it in the UltraPro, brushing the surface of the dough with egg yolk, using the Silicone Brush. Preheat the oven to 190ºc and place the UltraPro in the centre of the oven for 20 minutes.


Serve hot with butter or fresh fruit.

Recipes to enjoy!!!

Fruity Pancakes

Ingredients:

  • 2 cups Flour
  • 1/2 cup sugar
  • 1 egg
  • 200ml of milk
  • 1 tsp baking powder
  • 1 tsp cinnammon 
  • 1 tsb of margerine
  • 1 medium sized banana (or any fruit of your choice)
  • 2 tbs of vegetable oil (if not using a non stick skillet)

Method:
In a mixing bowl(batadeira mix) this can be found in Kitchen In Style www.facebook.com/kitcheninstyle, pour in together all the dry ingredients and whisk together with a hand whisk. Add your egg, butter and half portion of the milk. Cover the bowl and open up the white lid and insert your hand mixer. Mix all together, adding in your banana and milk if needed. When all ingredients are thoroughly mixed, put away your hand mixer and take out bowl cover. Fry on a hot skillet and flip pancake over when it starts to form bubbles.

Orange Sangria

Preparation time: 15 minutes


Ingredients:

• 2 lt good red wine

• 1 glass of port wine (± 250 ml)

• 1 lt orange juice

• Juice of 1 kg oranges

• The peels of these broken to tidbits

• Ice and sugar to taste

Preparation:

Wash oranges in double sieve. With the Cutting Knife, cut the oranges in half. Squeeze them with Espreme and Rala Mix fixed in with the Jarro Medidor Mix Grande . Cut peels of oranges and mix all ingredients in Jarro Prelúdio and Victória Elegância. Taste and add sugar or ice to your taste. Preferably, you should chill a few hours before serving if not using ice.

Cocktail without Alcohol

Cocktail of vitamins 


Ingredients for 2 people:


200 ml light cream


100 ml carrot juice


150 ml orange juice


25 ml of liquid honey



Preparation:


Place all ingredients in a ''copo misturador''(shaker) with the disc; pour all liquids inside and shake well.


Serve very cold!

Lemon Mousse

Preparation time 5mins


Ingredients:




2 cans of sweetened condensed milk


4 packs natural yoghurt


juice of 4 lemons

Preparation:



Beat all  in a Quick Chef with the paddle mixers.


With a Silicone Spatula, transfer the prepared to a Crystal bowl.


 Refrigerator several hours to solidify.

Does he DISLIKE milk or FRUITS?

i have some questions.


1)my son doesn't like fruits and dislikes drinking milk though i pile loads of milk in his cereals.


2) i try to feed him with african food but he loves his cereals a lot. how do i get him off cereal or rather make it just a morning routine.

FRUITS
In the world of all fruits, I'm very sure there is one he must love. There are so many to choose from and from experience I see children eating berries. It's quite irresistable to them. Try serving him strawberries, raspberries or even blackberries. When next you go shopping, if you buy mostly apples, pears or oranges, extend your fruit choices to peaches, clementines, watermelon, grapes, kiwi etc. There are so many you can try out and see his preference. When you buy his strawberries and want to serve him, sprinkle with sugar(castor) or confectioners sugar. Also while serving him his cereal, try adding strawberries to it or any fruit that comes in handy like cubed apples, pear, banana or even peaches. Yoghurts can go a long way in making him eat his fruits. Serve him fruits with dolops of yoghurt as the fruit topping.
MILK
If he doesn't like to drink milk but uses it in his cereal, it's very well then. At least, he's taking milk which is very rich in the food elements human beings need even if it's through another means. When he eats his cereal and eats it well, then you don't have to stress about him drinking milk. Nevertheless, if you want him to try drinking milk like from a glass, why not try making the milk a little different by flavouring it. You can use cocoa to make him hot chocolate or even add a little bit of vanilla to the milk but avoid making it too sweet for fear of spoiling the appetite. Also, you can blend some strawberries with milk and serve him, I bet you he'll love the colour and reach for it instantly!!!

There is something I tried out with my son. I noticed he didn't like drinking his milk from his little plastic cup after a while and would prefer taking sips from my mug and so I bought him a baby mug. I can tell you, it worked!
Based on your second question on him not liking African foods, it's okay. Never force him to eat what he doesn't feel like. Children when forced to eat something they don't feel like might turn out hating the food entirely which is what we must avoid. It might be a phase and he might come around later to start liking African dishes.
Concerning his cereals and his love for it, please never deny him his cereals when he asks for it. Cereals are wonderful for breakfast yeah, but if he decides not to eat dinner on a particular evening and would rather prefer cereals even after your indulgence, do serve him the cereal cos it's better he eats that than go to bed without any food. Structure his meals and menu in a way that it will be exciting and eating his meals will be fun for him and the whole family also.

Night breastfeeding - how to avoid that!

Dear O.O,
I usually don't advice mothers to avoid night breast feeds until they introduce solid foods to the baby. When the baby starts eating solid foods, then gradually the night feeds can be denied baby till he gets used to the new routine of sleeping all through the night without waking up to for night breast feeds. You can use these steps:
  • Solid foods: I usually introduce solid foods to my babies from 4 months starting with vegetables like potatoes, carrots, lettuce which I boil together and then make into a puree with a liquidizer while adding a dash of olive oil. When solid food is given to the baby, the baby's system also starts readjusting to the new food being introduced. With time, the mother graduates from veggies to more complex foods. When this is achieved, the mother can then start denying the baby night breast feeds.
  • Feeding Habits: When baby has fully started eating complex foods, then the mother will be more comfortable to stop night breast feeds because the baby is eating other kinds of food to sustain him through out the night most especially. With my son, after I introduced solid food to him and complex carbs, I made sure he ate exceptionally well during dinner to keep him through out the night. This worked for a few days till he started waking up again to breast feed. Meanwhile, i knew my son loved his bottle alot and so I would make his milk, get him to drink it around midnight even though he was already asleep. Not too much work right? At least you all get to sleep through the entire night.
  • Water feeding: This is my last step. If you've tried the above things and your baby still wakes up to breast feed, you can try this. Buy a feeding bottle with very soft nipples almost like human nipples, wash and fill bottle with water instead of milk. If your baby still wakes up in the night or mid morning for breast feeds, give her the bottled water to drink. Definitely, she would not like it because it is not as sweet as the breast milk she's used to and might complain by crying but don't give up. Since baby is sleepy, give water, rock baby back to sleep. If tomorrow your baby wakes up again, use the same method and after you stick to this for some time, she will see that the breast milk will not likely be coming again and so she wouldn't bother waking up to water.

There are some things I can't imagine life without especially in my home; the kitchen to be precise. I call them my favourite things cos they make life easier in cooking, preparation or even cleaning. Living in Europe, having a nanny is not the cheapest or most affordable luxury so I find myself doing everything I want to alone or with the help of my husband. With my passion being cooking and baking, I always find myself drawn to newest inventions in the kitchen dept. in the malls. Some I purchase from the department stores and others online. But whatever it is, I believe will become handy some day. Some of my favourite things are as follows:

Listing all might be too lengthy and become boring, so I will just go ahead and show you how I make these work for me at home and help simplify my life to make it more interesting.




    I cannot over emphasize shapes in foods. The 'numero uno' move to make your children(adults as well) eat what is good for them and they don't really fancy. I love to make pancakes during the weekend especially saturdays because that's the only time I have the whole family eat together without the hustle of the week of rushing off to work or school. But unfortunately, I realised I had so much to stack away after some time cos they started losing interest in the pancake. I held back a little bit and started making the pancakes bi-weekly( making on a saturday and skipping the next) and trying new things in the shape and flavour. My son at his age is so fascinated with animals and shapes and so I bought animal cutters and made out shapes from the pancakes which made him delve in for more just cos of the shapes. With flavours also, I usually freeze up fruits in season especially when they are at very low prices in freezing bags. My kids love strawberries and so I crushed them(frozen strawberries), added it to my pancake batter and how the pancakes turned out- yummmh!
PIZZA SLICER
The pizza slicer might be used for slicing just pizza but not for me. I call this my time saver. In my bakery business, I use the pizza slicer in almost all of my pastry cutting especially with the chinchin(pipocas africana). I guess those of us conversant with making chinchin will sure agree that the rolling and cutting can be time consuming and that can make it very tiresome and boring. It's gliding wheel makes all the difference. Experiment with this when next your making your chinchin; explore. With this tool you can save time, make more shapes, and have better cuts.
